Yello Juice Bar: Celery Sweetness!

Celery has become the superfood talk of the town in the world of juicing.

 

Why? It’s super low in calories but a single serving provides 37% of the target daily value for Vitamin K (for your blood and bone health) and is a great source of folate, potassium and fibre (for positive digestive health).

In fact, there has been evidence to suggest that celery facilitates weight loss, fights inflammation, reduces blood pressure and boosts cardiovascular health because of a naturally occurring chemical compound called apigenin. Studies show that this little compound found in celery exhibits antioxidant, anti-inflammatory and anti-cancer properties. It’s no wonder they say a cup of celery juice in the morning does wonders for your life!

Some of you may be wondering: Why incorporate celery in juice? Why not just eat it? The truth is that you can eat it… but not everyone likes the taste of celery. Juicing it allows you to add other natural sweeteners (like pineapple) to make it more palatable. It also removes the fibrous portions of the plant to ensure that you’re absorbing ALL of its vitamins and minerals. Whether you eat it or juice it, adding celery to your diet is never a bad idea.

Celery Sweetness

Serves 2-3

Ingredients:

4-5 stalks of celery, chopped

1 cup pineapple, chopped

The juice of 1 lime

3/4 cup water

Instructions:

  1. Add all ingredients to a blender and blend on high until fully pureed.
  2. For a more pulpy juice, strain with a standard kitchen sieve. For a smoother juice, strain using a cheesecloth or fine-mesh sieve.
  3. Drink immediately over ice.
